Fresh Lake Trout, Beer Batter and Whiskey Ridge Spices


Okay can all admit that if you like eating fish there is nothing better than eating fish that were caught that day.  Fresh fish is truly awesome to eat.  We like it so much that we thought we would share a recipe with you.

One of the most recent fishing trips we caught 12 fish in 2.5 hours.  Average weight was 4 lbs.  So you know what that means…….FRESH FISH FRY!

After we got these fish cleaned up and deboned we need to prepare our seasoning line up.  Below is what we used for this mix.

Now when it comes to beer batter you can choose whatever you like.  For this recipe we used McCormick’s Beer Batter.  Also you will notice that we have some other seasoning, Whiskey Ridge Spices and PBR.  Everything that is in the image above is an absolute must when making fantastic beer battered fish.  When it comes to the spices you always need to add way more than what you think you need to.  

For example the image below looks like it is seasoned properly and ready to go.  

This could not be further from the truth.  When you see your bowl look like this go ahead and double up or even triple up the amount of seasoning you added.  Beer batter soaks up seasoning like it is it’s job.  So add more!

One of the key ingredients to beer batter is the beer.  One thing that we have noticed is the PBR provides the best taste.  Can we give you a reason why….no.  All we can say is that it just does.  So make sure you add your PBR.  In a soon to come, blog post we will share with you a chicken enchilada recipe that has PBR in it.  Trust us, you will love it.  

Okay back to the fish and the beer batter.

Once you have your beer batter properly seasoned go ahead and add your fish.  It should look something like this.  

Then go ahead and preheat your oil to around 350 degrees.  Once your oil is heated to the proper temp gently drop the beer battered fish into the hot oil.  Be careful when you do this because oil does have a tendency to splash up.  As far as cooking time goes it will all depend on how many pieces of fish you put in the oil so just watch your fish while it is cooking.  Once the batter is a golden brown and the fish is floating you can remove the fish from the oil.  Place the fish on a paper towel to soak up any extra oil.  So it should look something like this

Once your fried fish has cooled enough to eat.  Sample a piece and see if you need to add more Whiskey Ridge Spices!  If you need more spice, then add it and enjoy!
